Ingredients   : 

Chicken filling:
2 large skinless, boneless chicken breast halves
3 cups water
1 tablespoon chili powder
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/8 teaspoon cayenne pepper
1 (7 ounce) can chopped green chilies, divided
1/2 cup diced onion
3 large cloves garlic, minced

Sour cream sauce:
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup water
1 cube chicken bouillon
1/2 cup sour cream
salt and pepper to taste
oil for frying
8 (8 inch) flour tortillas
8 ounces shredded Monterey Jack cheese

Direction   : 

Put chicken breasts in big saucepan. Add water; season with
cayenne pepper, onion powder, garlic powder, 1/4 tsp. black
pepper, cumin, 1/2 tsp. salt and chili powder. Simmer on high
heat; lower heat to medium low. Simmer for 15 minutes. Mix 4-
oz. green chiles, garlic and onion in after 15 minutes; simmer till
liquid reduces to 1 cup. Put leftover 3-oz. chopped green chiles
aside. Remove chicken, use 2 forks to shred. Put back into onion
mixture.

Meanwhile, melt butter in small saucepan on medium heat then
mix flour in; cook for 1 minute. Whisk bouillon cube and water
in for 4 minutes till bouillon cube dissolves and water thickens.
Whisk sour cream and reserved 3-oz. green chiles in; season with
pepper and salt to taste. Keep warm.

Heat oil to 190 ° C/375 ° F in big saucepan/deep fryer.

Put 1 tortilla on work surface; put 1/3 cup chicken filling midway
between bottom edge and middle of tortilla. Flatten filling using
back of spoon to rectangle shape; sprinkle 1-oz. Monterey jack
cheese on filling. Fold bottom of tortilla snugly on filling; fold
right and left edges in. Roll up chimichanga to top edge, making
tight cylinder. Use wooden toothpicks to secure ends; repeat with
leftover ingredients.

Cook chimichangas in hot oil, 2 each time, for 1 minute per side
till golden brown on both sides and crisp. Drain on plate lined
with paper towel; remove toothpicks. Put sour cream sauce over;
serve.
