Ingredients    : 

1 cup pecan pieces
1 head savoy cabbage, sliced
8 fresh peaches, pitted and sliced
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1/2 cup chopped green onions
2 tablespoons celery seed
1/2 cup fresh peaches, pitted and chopped
1/2 cup vegetable oil
1/4 cup honey
1/4 cup lemon juice
salt and pepper to taste
1 bunch fresh mint sprigs

Direction    : 

Put the pieces of pecan into a skillet and start cooking them at
moderate heat until they become gently toasted. During the
process, stir regularly.

Combine celery seed, green onions, yellow bell pepper, red bell
pepper, 8 fresh peaches, cabbage and pecans in a big bowl. Leave
it chilling in the fridge, covered, for 45 minutes.

Insert 1/2 cup of chopped peaches into a food processor or
blender then process it until smooth. Move it into a bowl and
combine with pepper, salt, lemon juice, honey and oil. Before
serving, leave the dish chilling in the fridge. When ready to serve,
coat everything by tossing then add mint sprigs over the top.
