Ingredients   : 

4 (4 ounce) boneless pork chops
salt and ground black pepper to taste
2 cups oil for frying, or as needed
1/4 cup all-purpose flour
1 egg, beaten
3/4 cup panko (Japanese-style bread crumbs)

Direction      : 

Put pork chops between 2 sheets of heavy plastic onto a solid,
level surface (also works great with resealable freezer bags).

Then use smooth side of a meat mallet to pound the pork firmly
to a 1/4-inch thickness (about .75 cm). Add pepper and salt to
season to taste.

Add oil into a skillet until it reaches about 1/2 inch (1.25 cm)
deep. Then heat the oil on medium-high heat to 190 degrees C
(375 degrees F).

Put panko crumbs, egg and flour in separate bowls. Then coat
every cutlet in flour, followed by egg and lastly in bread crumbs.

Tap off any loose crumbs.

Fry the cutlets for about 4 minutes on each side until cooked
through and golden brown. Then place on paper towels to drain.
