Ingredients   : 

2 tablespoons extra-virgin olive oil
1 small onion, thinly sliced
2 cloves garlic, minced
2 cups cubed zucchini
7 saffron threads
1/2 teaspoon ground cumin
1 pinch ground turmeric
salt to taste
freshly ground white pepper
1/2 lemon, juiced
1 tablespoon chopped fresh mint

Direction   : 

In a skillet, heat olive oil over medium heat.

 

Add garlic and onion, cook for 4 minutes till soft. Place in pepper, salt, turmeric,
cumin, saffron and zucchini.

 

Cook while stirring for 8 minutes till zucchini are soft yet firm to bite. Take away from the heat and let
cool.

Drizzle lemon juice over the zucchini mixture; add pepper and salt to taste.

 

Sprinkle mint over. Serve at room temperature or chilled.
